
I have been looking for some light, meatless dinner ideas recently and stumbled upon this old favorite. It's pretty quick to make and very tasty. My kid's love it too!

Broccoli and Bow Ties
Kosher Salt
8 cups broccoli florets (you don't need that much--just use 1-2 heads)
1/2 pound farfalle (bow tie) pasta (actually, I just made it with a full pound of pasta and that worked also)
2 Tablespoons butter
2 Tablespoons olive oil
1 teaspoon minced garlic
Zest of 1 lemon
1/2 teaspoon ground pepper
1 Tablespoon fresh lemon juice
1/2 cup toasted pine nuts (put raw nuts in a dry saute pan over medium heat for 3-4 minutes to toast)
Fresh Parmesan cheese, grated
Cook the broccoli for 3 minutes in a large pot of boiling salted water. Remove the broccoli from the water with a slotted spoon. Place in a large bowl and set aside.
In the same water, cook the bow-tie pasta according to the package directions, about 12 minutes. Drain well and add to the broccoli.
Meanwhile, in a small saute pan, heat the butter and oil and cook the garlic and lemon zest over medium-low heat for 1 minute. Off the heat, add 1-2 teaspoons of salt, the pepper, and lemon juice and pour this over the broccoli and pasta. Toss well. Season to taste, sprinkle the pine nuts and cheese and serve.
